David Rubin Breaks Down the NYC Restaurant Grading System

David Rubin, Partner in GEAB&P’s Food, Beverage & Hospitality group, published a Client Alert entitled, “Living with the New York City Restaurant Grading System.” This client alert details the origin of the rating system, the process that restaurants endure while being rated and provides a brief question and answer section to help readers familiarize themselves with the practice.

Rubin sums it up in his alert, “Despite the fear of government intrusion into the complex challenge of operating a restaurant, restaurateurs have adjusted to the grading system rather well: 85% of all restaurants now receive an A grade. This success rate is due, no doubt, to the restaurateur’s increased attention to the regulatory landscape, which, much like the tech industry, can be expected to continue to change as quickly as the color of unrefrigerated tuna.”
